Simple Fish Stew

2 lbs. Monkfish, cut into medallions, approx. 3/4" thick

4 medium red potatoes, 3/4" dice

2 sweet onions, (Walla Walla, Vidalia, etc.) chopped

Butter for sauteing, approx. 4 Tbl.

Milk or Cream, depending on your concern for your arteries

Salt

Red Pepper flakes or Saffron


In a 4-6 qt. heavy covered pan or pot, Sweat the onions in 2 Tbl. butter. Saute the Fish in the remaining butter separately for a minute or two and add to onions. Add just enough milk, with a little cream, to barely cover. Add salt and pepper flakes or Saffron (Not both!) Cook, covered, for 10-15 minutes, then add potatoes, and cook until tender. Serve with green salad, crusty bread, and a nice unoaked Chardonnay. I'm also thinking maybe a Spanakopita style popover, with spinach, egg, lemon, and nutmeg would be good.

I've been subsisting on snack-ish or breakfasty though nutritious food the last two days due to schedule. I plan to cook this weekend. Yippee. Maybe just something simple and cheap like a lentil soup, but a siren song is singing to me and telling me to de-vegetarianize (I eat fish when I go out and all kinds of stuff when I am overseas but as a rule I'm a veggie at home, well, no longer a purist so maybe 90 or 95% of the time) and go to the outside-the-city farmers' market and get me some sustainably raised lamb and make something with it. I'll have to count up my pennies but it may be doable. Even stew meat would do the job nicely. It is really, really good lamb and local. (The farm has beautiful yarn, by the way, if anyone is into knitting or weaving.)

Just reading it, my eyes were watering from the onion. Oh...and the smell - heavenly. I'll add that one to the receipe list. Thanks.
